Shrimp and Tomato Rice Salad
The main body of this salad contains approximately the following, although it could be modified quite a bit… the gist of it though is that it’s a mix of shrimp, tomatoes, and rice, with other vegetables added as you like them:
1/2 pound of shrimp
1 1/2 heirloom tomatoes
8 grape tomatoes
4 mushrooms
1/4 red onion
2 cups of rice
The dish is served cold so the shrimp and rice should be cooked in advance. Total cost for the above for me was just over five dollars and it serves two to three people depending on hunger — just mix up the above and add a light dressing. I had already made the dressing in advance for another salad that was a mix of 1/4 mayonnaise, 1/4 lime juice, 1/4 balsamic vinegar, and 1/4 olive oil, with a little red pepper and sea salt. A delicious, inexpensive meal. Terrible photo unfortunately…

This is perfect for an Eastern Orthodox. We fast from meat and fish and poultry and dairy and eggs on Wednesday and Fridays and during the fasting seasons. I also love to take photographs of the dishes that are served to me. Perhaps we could create a community blog for this sort of thing? I don’t really like having my own blog. I am having miso noodle soup for dinner tonight.
A photo tip. Capture the whole dish, meaning in the bowl and also the table. It frames it better. I might make my food pictures public on my Flickr site and then you could look. I am being harassed and stalked on the Internet so I have become very weary of showing anything.

1 Knoblauchzehe, fein gehackt
1 Halbe rote Chilischote, fein gehackt
15 Gramm Butter
1 Essl. Olivenöl
8 Tiefgefrorene Riesengarnelen
220 Gramm Spaghetti
1 Halbes Bund Petersilie, gehackt
getrocknete Tomaten und weisswein
1 Essl. Olivenöl
1 Knoblauchzehe, fein gehackt
1/2 Chilischote, fein gehackt
Meersalz
Frischer Pfeffer
Für die Sauce Knoblauch und Chili leicht in Öl andünsten mit dem weisswein und den davor aufgeweichten Tomaten zugeben und gut verühren. Ca. 20 Minuten bei kleiner Flamme köcheln lassen. Mit Salz und Pfeffer abschmecken.
In der Zwischenzeit die Nudeln kochen und warm stellen. Für die Meeresfrüchte Butter und Olivenöl erhitzen. Chilischote und Knoblauch andünsten. Garnelen ins Öl geben bis sie gar sind.Tomatensauce und Nudeln zugeben und gut vermengen. Mit gehackter Petersilie anrichten.

i am vegan but this dish is nice because it seems so easily moddified, i love when you post the recipies i am learning how to cook so its very helpful keep it up!!!

I always feel bad looking at your wonderful meals as they look fairly easy to make and way tastey and usally good for you, yet i cant find myself the time to try some. I best do that sometime, i probally am missing out on alot of good stuff!!

Cooking for me is a lot like Shannon. I walk in the kitchen, see what I have and end up with original dishes.
One nite, I was in the mood for tomato soup. Well I had home canned tomatoes, green pepers, onions, some hot sauce, milk, real butter. chopped all real fine and heated to just bubbly. Turned down the heat and let simmer while I made grill cheese sandwiches with ranch dressing on the side. Omigod, it was fantastic.
To me is always cook what you like, and just throw it together.
My favorite though is to roll out real thin, biscuit dough (about the size of a cookie sheet). Pour on 1 lb of your favorite meat or beans that have been cooked with 1 medium onion. roll into a log, fold the edges under and bake at 350 til when tapped by a spoon it sounds hollow. Cover with your favorite hot gravy and serve.

What do you mean by you’re eating “maggots”?
I’m reading a book set in Shanghai where two guys go to a restaurant and eat delicious “rice-maggot” omelette.
Has anybody heard about that??
